Beef Fillet With Vegetable Salad

Carpaccio is raw meat or fish sliced thinly. I've always wanted to try Fillet Beef Carpaccio, this wasn't a traditional Carpaccio as I seared the outside of the meat, then cooked it in the over for about 6 minutes. I wasn't disappointed though, the soft meat, with the crunchy vegetables & peppery pesto, was really delicious!

INGREDIENTS:

Celery
Asparagus
Carrots
Tarragon
Beef Fillet

120g Pecans
Puff Pastry
6 Tbsp Maple Syrup
